I love to cook.  No, I mean I REALLY LOVE TO COOK! I brings me much happiness. Normally I will see a recipe and make it the way it is written the first time and then make my adjustments from there.  I decided I wanted to make a chocolate cake.   I grabbed a container of Hersey’s Cocoa Powder and saw a recipe for a “Perfectly Chocolate Cake”.

I did make a few minor adjustments to the recipe. We are primarily a Gluten Free household right now, or should I say that we are a wheat-free household.  There may be some places in recipes I list that contain some sort of Gluten so if you cannot have gluten double check that your ingredients do not contain gluten.  I am exploring the possibilities of what I can make using gluten free flours that still taste good to me.

This might not be the best picture but I had to snap a quick one to include here!  Cake a la natural 😉

  • I also added the appropriate amount of Xanthan Gum that Bob’s Red Mill suggests on their package.
  • I did not have enough white sugar for a full two cups so I topped off the second cup with about 1/4 C light brown sugar to give me the full two cups called for in the recipe.
  • I added about 1/2 bag of Ghiradelli Semi-sweet chocolate chips.

I did find that I needed to cook it a little longer than the time listed but just check it at the recommended time and watch it every minute or two until it is done. I am typically a frosting gal and love frosting but I found this cake to be sweet enough that I didn’t frost it at all.  The leftover cake was stored in the refrigerator and it gives it an extra fudgy, almost truffle-like yummy loveliness.

I think birthdays are such a fun time. I love it when I know exactly what I want to do for someone’s birthday.  Sometimes, I don’t know, but when I do it makes me really happy!  My friend Jeanine had put up a message a while back(maybe a few months ago) that she would love a rainbow cake for her birthday.   She had posted a picture and a link regarding this cake that she liked.  So I looked into the link and the way that the cake had been made.  I would put that link here but there seemed to be some scuttlebutt regarding who came up with the idea first so if you want to be involved in that drama feel free to do a google search on rainbow cake and get all into the thick of it.  I choose to stay out of it and say yes I saw a picture and post of a similar rainbow cake.  I did not invent the idea.  I am simply fulfilling a dear friend’s birthday cake wish.  There!  Enough said on that!  So here are some pictures of my cake making extravaganza.

 Next I assembled them roygbiv style into the cake pans.

Next we take advantage of the baking time to do a little cleanup in the kitchen.

As I watch the rainbow of color dissipate into the dish suds I still feel this happy excitement.  Why?  Because I know in just a few moments I will be peaking into the oven to catch a glimpse of the rainbow.  All I could think of was Rainbow Bright…or Punky Brewster.   Or even flashes of this doll that I think was called Candi.  She had a bright yellow shirt/dress and rainbow colored tights. Unicorns prancing merrily in the fields…. fairies fluttering about…..a pot o’ gold…..perhaps even Carebears!  lol!  Time to finish up those dishes and take a peak in the oven….

After passing the chopstick, err toothpick test for doneness, they needed to cool completely.  A quick check of instant messenging with Jeanine to make sure she was still coming over in the morning…ahh great, she is still coming over!  Time to make the buttercream frosting.  Is it still considered buttercream when it is made with ghee?  Hmmmm….My gheecream frosting 🙂 held up fairly well.  I needed to put the pastry bags into the fridge to re-set as the heat of my hands seemed to soften it up quite a bit while I was decorating with the pastry bag.

I placed the finished cake into the refrigerator and waited for her arrival. I cleaned off the kitchen table to prepare for our plarning adventures.  You see, she was coming over to make balls of plarn wih me.  If you don’t know about plarn, it is “yarn” made from plastic.  In this case recycled plastic bags.  I will have a future post regarding this as I am working on my first plarn project right now.

Back to the cake!  I guess she had forgotten about the post regarding the rainbow cake because as she cut into the cake, she noticed the rainbow colored pattern on the blade of the knife.  “Ohhh…you have to take a picture of this!  Look at the rainbow!”

At this point I thought for sure that she knew it was a rainbow cake but she didn’t!  When she removed the first slice of cake, revealing the inside she looked SO surprised.  Ahh a priceless moment!  I will remember that moment for quite some time.  I have a few more pictures to share.  Here is a picture of the first slice removed.

 I am not one for artificial colors or chemicals in my food, but I have to admit that I had to smile every time I saw the colors.  Hard to explain but seeing this cake just made me happy.

The slices had a whale tail pattern.  I can envision many possibilities of patterns with food coloring in cake batter….far beyond the typical marbling.  

So I dedicate this blog post, not only to Jeanine, but to those that have asked me for more baking.  What can I say, I love to make food for people.  Apparently, even those of you that can’t be physically with me to taste my food, still enjoy seeing it.  It is my honor then to have you “over” here for a sweet treat.
